Only a year after its opening, the fine dining restaurant, YU NIJYO, at the Kameha Grand Zürich has been renamed as YOU. The name is short but succinct with a special twist, just like Chef Norman Fischer's award-winning cuisine. Loved by guests and food critics alike, YOU has already been awarded 15 Gault Millau points and its first Michelin star in October 2105.
Having already gained a Michelin star at his previous post at Park Hotel Bremen, the 34 year old chef from Hamburg describes his culinary creations as cosmopolitan with far eastern influences and cooked in a French style. Chef Norman managed to take a little time away from the busy kitchen to answer 5 Questions for Gerry's Kitchen.

Here's Norman's story;

How did you get started?

My career started with a classical apprenticeship as a cook at the restaurant "Die Insel" in Hannover.

What’s the best piece of business advice you could give to aspiring chefs?

If you would like to enter into the world of fine dining gastronomy, money shouldn’t be first priority for you in the beginning. Also, you have to be prepared to sacrifice a lot of free time for work.

Where would you like to see yourself in 5 years time?

In this fast-paced world today, it’s hard to say. I only wish to be healthy and happy with my life.

If you could only have one of your own recipes, what would it be & why?

Fried fish with remoulade sauce – it is a simple dish but is full of great flavours.

You can invite one person (living or dead) to your last meal – Who would it be and why? …and what’s on the menu?

I would enjoy my final meal with German rapper, Sido – because I simply like to meet him in person. As mentioned before, the meal would be my fried fish with remoulade sauce.
